    Proteins and fats - preferably from animal sources and in organic quality - form the basis of a healthy ketogenic menu, as recommended in the context of the metabolism program dr.reinwald metabolic regulation®. These are supplemented by large quantities of fresh vegetables and salats, moderate quantities of fruit with a low glycemic load, and - also as an occasional snack - seeds and nuts. Dairy products, e.g. full milk, cream, natural yoghurt and cheese, are likewise allowed, always as full-fat varieties and as naturally as possible. Particularly suitable are fermentation products such as yoghurt, kefir, sauerkraut, kombucha and kimchi, as well as natural products.



    Beware of Sugar, Cheap Satisfiers, and Bad Fats!

    Sugar and carbohydrates should be consumed as little as possible. This applies not only to simple sugar/crystal sugar, but also to concealed sugar, as is found in soft drinks as High Fructose Corn Syrup (HFCS) and as an ingredient in almost every industrially prepared foodstuffs. Restraint is called for in regard to the most common basic foods - grains, rice, potatoes, pulses, pasta and bread. After all, their carbohydrates are also split into sugars during the digestive process. And then there are the cheap vegetable oils containing a high content in Omega 6 fatty acids, such as sunflower oil, rapeseed oil, and corn oil, which are definitely to be avoided, as well as particulary bad fats such as margarine. On the other hand, olive oil and coconut oil are eminently suited for a ketonic diet. The latter contain especially many medium-chain tri-glycerides fatty acids (MCT), which our body mainly needs to preserve the brain and nerves.
