Tomatoes-Feta-Frittata

Conceded: breakfast is difficult for most people who are converting from a mixed diet to a ketogenic diet. Indeed, rolls with butter and marmalade are no longer allowed, except possibly on very special occasions. On the other hand, ketogenic cuisine offers excellent alternatives for starting the day with a tasteful, energy rich breakfast that keeps you satisfied

Ingredients for 1 person:

  • 2 vine-ripened tomatoes
  • 20 g feta
  • 2 eggs
  • 1 tbsp cream
  • 1 tbsp carbonated mineral water
  • nutmeg,freshly ground
  • sea salt
  • handfull basil leaves
  • 1 tsp olive oil

Preparation:

  1. Wash and clean the tomatoes, and cut them into slices 1 cm thick.
  2. Whisk the eggs, cream and mineral water in a bowl and crumble in the feta. Season with sea salt and freshly ground nutmeg.
  3. Heat the olive oil in a coated pan and fry the tomato slices at medium heat for 2 minutes.
  4. Pour the eggs - cream - feta mixture over them and fry at high heat for one additional minute. Flip the tomatoes and fry for an additional 2 minutes.
  5. Place the gold colored frittata on a plate and garnish with basil leaves to give your day the perfect start.
